First Gastronomic Festival by Fundazucar and the Ministry of Economy

The Guatemalan Sugar Industry through the Sugar Foundation -Fundazucar- in alliance with the Ministry of Economy -Mineco- and the local government of Champerico, Retalhuleu held the first gastronomic festival called “Champerico Fest” to promote the new dishes created from the Diploma in Gastronomic Diversification and Seafood Cuisine.

In the same way, the artisanal fishermen, who participated in the training “Good fishing practices” given by Mineco, presented fresh product to publicize the quality of their products and the ability to supply potential customers.

In the event participated 300 people, including diners, chefs, cooks, and organizations such as: Z Gas, the Guatemalan Civil Association for Integral Development -Asdesarrollo-, National Mortgage Credit Bank -CHN-, National Port Company of Champerico, Guatemagica, Naval School of Guatemala, Intecap and the Ministry of Agriculture, Livestock and Food -MAGA-.

Economic Development Strategy

In 2021, the Economic Development Strategy for Fishing and Gastronomic Tourism on the South of Guatemala was launched, which is carried out in partnership between Fundazucar, Mineco, the Ministry of National Defense -Mindef-, MAGA and municipalities on the Pacific Coast.

The gastronomic festival is one more action of this strategy that seeks to recover and generate new sources of income for fishermen and workers in the tourism sector of the municipalities of the beach area of the South of Guatemala, as well to generate sources of employment.

Fundazucar, in alliance with Intecap, provides scholarships for chefs and cooks from local restaurants and hotels to strengthen their culinary skills. As well as training for hotel and restaurant owners and managers on “Excellence in Customer Service” and “Difficult internal and external customers” given by Mineco.

in the first promotion of Seafood Cuisine

On January 21st, 38 chefs and cooks from restaurants and hotels in Sipacate, Escuintla, (132 km South from Guatemala City) graduated from the “Seafood Cuisine” course, through a scholarship granted by the Sugar Foundation –Fundazucar- in alliance with the Ministry of Economy and the local government.

This diploma course is part of the Economic Development Strategy for Fishing and Gastronomic Tourism that seeks to support the economic reactivation of municipalities on the South of Guatemala that have tourism potential due to their beaches. The course was completed at the Technical Institute for Training and Productivity -Intecap- and lasted 80 hours and included good manufacturing practices and marketing of the finished product.

This is the first promotion of the “Seafood Cuisine” diploma course, in which chefs and cooks received knowledge to prepare innovative recipes based on seafood and thus expand the gastronomic offer to national and foreign tourists, with which it is provided an added value since the products they will use are purchased from artisanal fishermen. This is the second diploma course taken by these chefs and cooks since last year they took a diploma course on “Gastronomic Diversification” taught by Fundazucar.

The Economic Development Strategy for Fishing and Gastronomic Tourism aims to expand the gastronomic offer of hotels, restaurants and dining rooms in the beach area of the municipalities of Iztapa and Sipacate, Escuintla; Chiquimulilla, Santa Rosa; and San Andrés Villa Seca and Champerico, Retalhuleu.

If you visit the Las Lisas beach in Chiquimulilla, Santa Rosa, (160 km south from Guatemala City) you will find 30 chefs and cooks graduated from the Diploma in Gastronomic Diversification promoted by the Sugar Foundation – Fundazucar- in alliance with the Ministry of Economy and the local government.

This course, aimed at hotel and restaurant cooks and chefs, is part of the “Sustainable Strategy for Fishing and Tourism” which aims to promote economic reactivation in the beach areas of the shore of Guatemala.

The 30 chefs and cooks learned new recipes for dishes based on seafood from the region to be able to present innovative dishes to their customers and thus expand the gastronomic offer for tourists who visit the beach.

The graduates will continue their training the in 2022 at the Technical Institute for Training and Productivity -Intecap- with the diploma of “Cuisine of the Sea” with a scholarship granted by Fundazucar to continue innovating in new recipes.

The Gastronomic Diversification Diploma has been given in the towns of Escuintla, Santa Rosa and Retalhuleu and more than 200 chefs and cooks have graduated.

Champerico beach will have better cuisine offer thanks for Fundazucar

The Sugar Foundation – Fundazucar- in alliance with the Ministry of Economy and the local government of Champerico, Retalhuleu (226 km from Guatemala City) gave the Gastronomic Diversification diploma aimed at cooks and chefs from the different restaurants and hotels in that locality.

This diploma is part of the “Sustainable Strategy for Fishing and Tourism” which aims to promote economic reactivation in the beach areas of the South of Guatemala. In this case, 26 hotel and restaurant cooks and chefs completed training in new recipes for seafood-based dishes.

The graduates will continue their training the following year at the Technical Institute for Training and Productivity -Intecap- with the diploma of “Cuisine of the Sea” with a scholarship granted by Fundazucar to continue innovating in new recipes.

With this knowledge acquired, chefs and cooks will be able to present innovative dishes based on seafood from the region to their clients and thus expand the gastronomic offer for tourists visiting the town.

The Gastronomic Diversification Diploma has been given in the towns of Escuintla, Santa Rosa and Retalhuleu and more than 200 chefs and cooks have graduated.

The Guatemalan Sugar Industry, through its Sugar Foundation -Fundazucar-, supports the economic and tourist reactivation of the South of the country, therefore in alliance with the Ministry of Economy -Mineco- and the Municipality of Chiquimulilla, Santa Rosa, they carried out the diploma: Gastronomic Diversification.

28 chefs and cooks graduated from 13 hotels and restaurants in the beach town of El Chapeton, Chiquimulilla, located 154 kilometers (96 miles), southeast of Guatemala City, who learned innovative recipes based on seafood from the region to expand the gastronomic offer for tourists visiting the place.

The objective of the training program is to support economic reactivation by offering added value to tourists through the processing and transformation of products from artisanal fishing, as well as to acquire knowledge in good manufacturing practices, cold chain management and marketing of the finished product.

Chefs and cooks will continue their training at the Guatemalan Technical Institute for Training and Productivity -Intecap- with a scholarship for the Diploma “Seafood Cuisine” granted by the Sugar Foundation as part of the inter-institutional alliance, which promotes a strategy for the promotion local economic.

Interinstitutional Alliance presents strategy of Economic Development

for Fishing and Gastronomic Tourism

The Sugar Foundation -Fundazucar- together with the Ministry of Economy, Ministry of National Defense, Ministry of Agriculture, Livestock and Food and the municipalities of Iztapa, Escuintla; and Champerico, Retalhuleu, launched the Economic Development Strategy for Fishing and Gastronomic Tourism.

The strategy aims to recover and generate new sources of employment and income for fishermen and workers in the tourism sector in the municipalities of Iztapa, Escuintla (112 km of Guatemala City); and Champerico, Retalhuleu (224 km of Guatemala City) both at the shores of the Pacific Ocean.

The action plans include training in gastronomic diversification, good manufacturing practices, technical training, business, and fishing strengthening, and establishing a country brand to attract investment and visitors.

“We are convinced that together we will be able to position Iztapa and Champerico on the gastronomic, tourist and sustainable fishing map,” said Luis Miguel Paiz, general manager of the Guatemalan Sugar Producers Association.
