concluded Diploma in Gastronomic Diversification
As part of the Economic Development Strategy for Fishing and Tourism of the Guatemalan Sugar Foundation, the Ministry of Economy, and the local government, was completed the Diploma in Gastronomic Diversification for chefs and cooks of restaurants and hotels in the beach towns of El Rosario and El Hawaii villages in the municipality of Chiquimulilla, Santa Rosa, located 140 kilometers (87 miles), south of the country.
The objective of the Diploma is to train chefs and cooks on the processing and transformation of products from artisanal fishing, knowledge of good manufacturing practices, management of the cold chain and marketing of the finished product.
The course lasted 20 theoretical and practical hours, where the 24 participants learned innovative recipes based on seafood and ended with a presentation of dishes and tastings of what was learned in the Diploma.
Participants will start a scholarship for the Diploma “Seafood Cuisine”, provided by the Sugar Foundation. This will be given by the Technical Institute for Training and Productivity -INTECAP- as an alliance with the institution, the Ministry of Economy, and the Municipality of Chiquimulilla.
